Coconut Shrimp with Thai Sweet Chili dipping sauce
- 1 Egg
- 2/3 c. of beer
- flour
- 1 1/2 tsp baking powder
- paprika
- cayenne pepper
- 1 tsp. sugar
- medium sweetened coconut
- about 20 large, raw shrimp. Tail on.
- 3-4 cups oil for frying. (I used peanut oil)
Heat oil to 350 F. Mix the egg and beer. Add flour until you get a nice batter consistency add baking power and a sprinkle of paprika, cayenne and the sugar. Mix. Dip shrimp into plain flour, then batter then roll in coconut. Refrigerate for about 10-20 mins before frying. Fry until golden brown. Check the first few to make sure the oil temp/timing it right and then cook away!
Sweet Chili Sauce- 1 c. thai sweet chili sauce
- franks red hot to taste
- 1 tsp honey
- juice of half a lime
Mix together and enjoy with your shrimp.

This is what I am making after work today.
Apple Chicken Quesadilla
Prep Time: 7-10 minutes | Cook Time: 6 minutes
This recipe will make 4 Quesadillas
Ingredients:
8 Inch Flour Tortillas (4 of them)
1 Juicy Apple (Sliced finely)
1/3 lb of Colby Jack Shredded Cheese
1 Cup of Shredded Chicken
1/4 Cup of Hot Salsa
Directions:
1) Heat a large skillet on medium settings. Place 1 Tortilla in the skillet. Flip it a few times and then let it sit in one spot until you see air pocket form in the tortilla.
2) Now, place cheese on one half of the tortilla. Leave at least like a 1/4 of an inch gap from cheese to edge of Tortilla.
3) Now place cooked shredded chicken on top of the cheese.
4)Now fold the tortilla over like you were making an omelet with your spatula. And then press the spatula into the tortilla... and now wait until the cheese melts.
5)One it melts take it off the skillet. Open it back up and put the apple slices and salsa. Now fold it back up to how it was.

Cheesy heart attack dip. (stolen from a friend dont know what its called lol)
1 tube of breakfast sausage spicy or normal
1 large brick of velveeta.
1 can of rotel
its simple and easy.
brown and break apart sausage.
after sausage is cooked add rotel.
cut velveta into 1" sqaures and melt into sausage and ro-tel mix.
cook till all cheese is melted
serve warm with your favorite tortilla chips. scoops recomended.
and im going to get my momes recipe for stuffed apples later there delicious.
