There are any number of good "getting started" videos up on YouTube that can give you the high points of what you need to grab the stick and get flying, and I recommend hitting a bunch of them. The control system can be daunting, especially once you start looking at the keymapping options, but you can fly with a gamepad or just mouse & keyboard if you want. The game has an option for a solo no-enemy flight space for you to get the hang of your basic controls, definitely take advantage of that.
Once you start to dip your toes into the more complex stuff, you'll want to think about how you want to control your ship in the long run, and that's where it starts getting crazy. You can go mouse & keyboard, gamepad, joystick, HOTAS setup, dual sticks, or even the weird way I go (I use my HOTAS throttle and my mouse). We'll all have a ton of advice for you at that point, I'm sure.
Most importantly though is just to get into the game and start flying, and this is a great time to learn the basics as the 3.0 alpha is close to release and we'll all be learning together. I'll be happy to bring my ships so you can fly a bunch of different stuff.
